LES ACABAILLES, IS AN EXPRESSION DERIVED FROM THE LOCAL GASCON DIALECT, IT REFERS TO THE END OF THE HARVEST AND THE ACCOMPANYING CELEBRATIONS. With the last grape picked the vines find peace again and shimmer in their autumn colours, perhaps disturbed only by the song of a passing thrush coming to gorge on some forgotten grapes. In the wine cellars the purring of the pumps echoes the occasional hiss of the press, and the smell of fermenting grapes intermingle with the complex bouquet of ripe grapes. The Chateau owner gathers all his family and all the workers, who have come from near and far, to share a bountiful meal, to warm their hearts and strengthen their bodies after three weeks of hard work. It's the time to test the year's first wine, the "bourru", with its accompanying sweet chestnuts and apple pies. There is dancing, singing, much talk about the vintage, the wine it will produce. As in years gone by, everyone is very happy to partake in the harvest, to share this time together, and they all promise to be back again next year. Nowadays, even though techniques have evolved the tradition still lives on.
